Italian Cheese Log

This is probably the easiest cheese log you can make - except for just putting the cream cheese on a plate and pouring something over it like jalapeno jelly.   Those are good but this one is a favorite - and someone always asks for the recipe.  You really don't need a recipe - it is that easy!  I just wanted to 'document' it.


Italian Cheese Log
8 ounce brick of cream cheese (regular or low fat)
1 package of dry Italian dressing mix - Fiesta Italian is good too

That's it!

Spread the dressing mix out on a piece of waxed paper or aluminum foil.  Doesn't have to be spread evenly - just spread it out a little.

Take the block of cheese and press it into the mix - covering all sides completely. 

Keep pressing and flipping - pressing and flipping....

Place on a serving dish and surround with crackers.   I like Triscuits with it but any cracker will do.

    1 (16 ounce) jar salsa
    1 (1.25 ounce) package dry taco
    seasoning mix
    1 lime, juiced
    3 tablespoons chopped fresh cilantro
    3 pounds skinless, boneless chicken
    breast halves

    (I add one can of pinto beans, and about 1 cup of corn to the above, plus add more cilantro!)

    Directions:
    1. Place the salsa, taco seasoning, lime juice, and cilantro into a slow cooker, and stir to combine. Add the chicken breasts, and stir to coat with the salsa mixture. Cover the cooker, set to High, and cook until the chicken is very tender, about 4 hours. If desired, set cooker to Low and cook 6 to 8 hours. Shred chicken with 2 forks to serve.

    I usually serve over penne pasta, but would be good over fresh lettuce or in tortillas too!
